I’ve always loved anything with lemon-so much so that I requested lemon cake every year for my birthday growing up. That love for bright, citrusy desserts has carried on to my own kitchen, and now my son does the same, asking for lemon cake each year when his birthday rolls around.
These classic lemon bars are one of those simple recipes that bring that same fresh, lemony flavor without much fuss. They’re easy to make in an afternoon and just as good with a cup of coffee in the mornings as they are for a little treat after a long day.

Ingredients
2 c. sifted flour
1/2 c. sifted powder sugar
1 c. margarine or butter
4 beaten eggs
2 c. granulated sugar
1/3 c. lemon juice
1/4 c. flour
1/2 tsp. baking powder
Sift 2 c. flour and powdered sugar together. Cut in margarine (or butter) until mixture clings together. Press into 13 x 9 in. baking pan. Bake at 350 degrees for 20 minutes.
Beat together eggs, granulated sugar, and lemon juice. Sift together 1/4 c. flour and baking powder. Stir into egg flour and baking powder. Stir into egg mixture. Pour over baked crust. Bake at 350 degrees for 25 minutes more.
Sprinkle with powdered sugar.
